It is said about Punjab that it belongs to people eating and drinking. Every city here has its own taste, which also reflects their food. It is said that people here are very heartbroken in eating and drinking and food here is very tasty. These delicious dishes are liked by people from almost all regions of India. Punjab mainly produces wheat, rice and dairy products. Therefore, Punjabi people use them more in their cuisine. Milk and curd are used in their food. If you talk about the plate, then it definitely includes chickpeas. Remember from Chole, this is a dish that everyone likes to eat. But do you know that gram can be made in many ways but which we are sharing with you.


Chickpeas Material:



  • 2 cups of kabuli gram (soaked overnight)

  • 2 big onions (finely chopped)

  • 3-4 tomatoes (puree)

  • 2-3 green chillies (chopped)

  • 1 tablespoon ginger-garlic paste

  • 1 teaspoon cumin

  • 1 teaspoon turmeric powder

  • 1 teaspoon coriander powder

  • 1 teaspoon red chili powder

  • 1 teaspoon garam masala

  • 1 teaspoon gram masala

  • 2-3 bay leaf

  • 2-3 cloves

  • 1 cinnamon stick

  • 2-3 green cardamom

  • 2 tablespoon oil or ghee

  • Salt taste

  • Green coriander (for garnish)


Bhature content:



  • 2 cup maida

  • 1/2 cup semolina

  • 1/2 cup yogurt

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1 teaspoon sugar

  • Salt taste

  • Water (as required)

  • Oil (to fry)

Recipe for Chickpeas:



  1. First of all, soak chickpeas in water overnight. In the morning, cook them with salt and water in the pressure cooker till 3-4 whistles.

  2. Heat the oil in a pan and fry it with cumin, bay leaf, cloves, cinnamon and cardamom.

  3. Now add ginger-garlic paste and fry it till it becomes golden.

  4. Add chopped onion and fry it till it becomes light brown.

  5. Now add tomato puree to it and cook well by adding spices (turmeric, coriander powder, red chili powder, garam masala, and gram masala).

  6. When the spices start releasing oil, add boiled chickpeas and cook for some time.

  7. Cook the chickpeas on low flame for 10-15 minutes so that the spices mix well.

  8. Decorate the prepared chickpeas with green coriander and serve hot.


Method of making Bhature:



  1. Add flour, semolina, curd, baking powder, baking soda, sugar and salt to a pot and mix well.

  2. Slowly add water and knead the dough. Keep the dough soft and cover it and allow it to be set for 1-2 hours.

  3. After the dough is set, divide it into small round dough.

  4. Prepare medium -sized bhature by rolling the dough.

  5. Heat the oil in the pan and fry the bhatura until golden and bloated.

  6. Serve with hot bhature chickpeas.


Tips:



  • Bhature will become soft and bloated only when the bhatura flour is set well.

  • Putting kasuri fenugreek or mango powder in chickpeas further enhances its taste.


Chole-Bhature You can serve with onion, pickle and raita. This delicious dish is the best option on any particular occasion or in a Sunday brain!
