New Delhi:As soon as the holy festival of Ganesh Chaturthi approaches, the aroma of various traditional dishes starts smelling in the houses. The famous sweets of Maharashtra are specially prepared to welcome and enjoy Ganpati Bappa. If you are also thinking of making something special in sweets to please Bappa this time, then the traditional 'Puran Poli' is a great option. This dish prepared with sweet stuffing of gram dal and jaggery is delicious in taste and very easy to make. When it is served with hot desi ghee, its taste doubles.
Special method of making delicious stuffing
To make Puran Poli, first soak one cup of gram dal in water for about half an hour. After this, mix some desi ghee, one-fourth teaspoon turmeric powder and water in the cooker and cook the pulses for about four whistles.
When the lentils are boiled well, remove all the excess water with the help of a strainer. There should not be even a single drop of water left in the dal, otherwise the stuffing will become wet and the poli will start tearing while rolling.
How to make soft dough
Now add boiled lentils and a cup of jaggery powder in a pan and cook on low flame until it becomes a thick mixture. In this step, add half teaspoon cardamom powder, a little ghee and one-fourth teaspoon nutmeg powder. When this mixture cools completely, grind it with the help of a masher or a spoon until it becomes completely smooth.
The softer the dough of Puran Poli, the softer the Poli will be. For this, mix one cup wheat flour, one cup all-purpose flour, a pinch of salt and one-fourth teaspoon turmeric powder together in a bowl. Now add water little by little and knead a soft dough. After the dough is ready, apply one or two spoons of oil on it and leave it covered for about an hour. After the stipulated time, knead the dough again gently and prepare small balls of equal size.
Roll like this and serve hot
Now take a ball of prepared dough and shape it like a bowl. Fill the prepared puran stuffing in the middle and close it well by lifting the edges. Just like potato paratha is rolled, roll it with light hands. Then put it on a hot pan on medium flame and cook it till it becomes light golden from both the sides. After it is roasted, apply a lot of desi ghee on top and after offering it to Bappa, serve it hot. This traditional dish will be prepared perfectly the first time.
