Noodles do not always have to come from a packet. With just two basic ingredients — pumpkin and flour — you can prepare fresh, homemade noodles with a soft texture and a naturally golden colour.
This simple recipe is a creative way to use leftover pumpkin and can be a lighter alternative to some instant noodle options, depending on the flour and toppings you use. Pumpkin adds natural sweetness, colour and fibre, while flour helps bind the dough.
The best part? You do not need specialised equipment or advanced cooking skills to try this recipe at home.
You only need two main ingredients:
The quantity of flour will depend on how moist your pumpkin is. Add it gradually until the dough becomes soft and manageable.
Peel the pumpkin, remove the seeds and cut it into small pieces. Steam or boil the pieces until they become tender. Drain any excess water thoroughly.
Mash the cooked pumpkin into a smooth puree. Allow it to cool before mixing it with flour. Removing excess moisture helps prevent the dough from becoming too sticky.
Add flour to the pumpkin puree a little at a time. Mix and knead until you get a soft dough that can be rolled without sticking excessively to your hands.
Avoid adding too much flour at once, as this can make the noodles dense.
Roll the dough into a thin sheet on a lightly floured surface. Cut it into narrow strips using a knife or pizza cutter. Separate the strips gently so they do not stick together.
Bring a pot of water to a gentle boil and add the noodles. Cook until they are tender and cooked through. Cooking time will depend on their thickness, so check them as they cook.
Drain and serve immediately. You can enjoy them plain or toss them with vegetables, herbs, garlic or your favourite sauce. These additions are optional and are not part of the two-ingredient noodle base.
Pumpkin contains fibre, beta-carotene — which the body can convert into vitamin A — and other nutrients. Using pumpkin in homemade noodles can also add colour and flavour without relying on artificial colouring.
However, the overall nutritional value depends on the flour used, portion size and accompanying ingredients. These noodles are not automatically lower in calories than every packaged noodle product.
Two-ingredient pumpkin noodles are an easy way to experiment with homemade pasta using simple ingredients. With pumpkin and flour, you can create colourful noodles that work well for lunch, dinner or a quick homemade meal.
If you have leftover pumpkin in the fridge, this recipe is a practical way to turn it into something different without needing a packet of instant noodles.
